Ingredients:
15 oz. (1 can) canned pumpkin, (not pie filling)
¾ cup pitted, dried dates
2 Tbsps cashew butter or almond butter
1 ½ tsps pumpkin pie spice
5 grams stevia sweetener (2 packets Truvia)
2 pinches salt
*May use ground cinnamon, nutmeg, (and less) ginger and allspice instead of pie spice blend.
Preparation:
1. Add all items to blender and blend until completely smooth. Scoop into bowls and eat fresh.
*Optional: top with 2 Tbsps cool whip or whipped cream (for ~30 calories more)
(May be thick enough to use as filling in a pie crust, for pumpkin pie)
Serving: 7 Tbsps or heaping 1/3 cup
